Whole-wheat pizza dough report (photo)

Made it yesterday afternoon, following a non-recipe - basically 2 envelopes of yeast and a tsp. of brown sugar dissolved in 1.25 cups of warm water, mixed with 0.5 cup of white flour and as much whole-wheat flour as necessary (probably around 2 cups).

Kneaded for 10-15 minutes. Let rise for 1 hour. Punched down and split into three portions (for medium pizzas). Froze two and made one.

Baked the crust on the back of a cookie sheet at 450°. First bake for 5 minutes, then added toppings, then baked for 10 minutes.

The dough turned out thin and crispy, just the way I like it. It looks a but ugly though, because I'd originally made it too big for the cookie sheet, and I had to kind of un-stretch it. But the taste was great, and the leftovers were not soggy this morning!
