'wet' smoked tuna?

Having moved to LA area many years ago, I was happy to find that Broadway Deli, recently deceased, sold a type of tuna that is smoked. In California, I can find the type of tuna that appears cooked and smoked;The flesh is white. The kind of tuna that I prefer retains the reddish-pink color of raw tuna, and is not dry or flaky like the white type. 1) Is there any for purchase here, and/ or 2) can anyone offer a recipe I could prepare at home? Thanks for the help
