West Maui - Critique our choices & need rec's

We're headed to Maui in a few months and I'd like input on our restaurant choices. We live in San Diego and Roy's is right down the street, so that's out. We also have phenomenal sushi here so even though I've heard raves about Sansei, I'm wondering if it's a good choice for us as we have great Pacific sushi on a regular basis...

We have six dinners to plan and this is what we have so far (we'd like to stay in West Maui for dinner to avoid a long drive home):

1. Old Lahaina Luau
2. David Pauls
3. Pacific'O
4. Pupu Platter at Warren & Annabelles (going for the magic show) followed by sushi at Sansei
5. Mama's Fish House (on the way back from Hana)
6. Feast at Lele

Also, which one of these is the best for a BIRTHDAY. We're celebrating my fiance's 30th with this trip, I'd like something where they make him feel very special. :)

Yes, we're doing two luau's, from what I have heard they're both very distinct. Should we replace any of these choices with Plantation House or...?

Breakfast:

1. Gazebo.

That's all I've got. Please throw your recommendations this way.

Lunch/Beverages:

1. Leilani's - I hear they have a great hh on Friday's - $2.50 mai tais.
2. Kimo's
3. Aloha Mixed Plate
4. We'll be snorkeling one day, any snorkeling trips with better than average eats?

Any other suggestions would be great! This trip is for relaxing so suggestions in West Maui specifically would be great. Next year we'll be going to explore more of the island and the eats. :)
