I have had mixed experiences and have heard mixed reviews on this question. Friends who claim to be "in the know" say that at top restaurants, going during the week is always better because the seafood is fresher and the waitstaff are less under pressure and therefore more helpful, friendly, etc. This makes sense, but still, everyone is always hot for Friday/Sayurday night reservations.
I had to make a choice with Babbo (in the end I took a better time on a Wednesday as opposed to a later slot on Sunday), but I have no basis for comparison. Does anyone have thoughts on this? How do weekday experiences compare to weekend ones at top places? (I know, I know, it "depends on the place," but if the food freshness/waiter pressure thesis is true, then there should be some across-the-board differences.)
