weekday lunch somewhere between Pelham NH and Wells Maine

WHERE? This will be on a Friday in a couple of weeks to begin a getaway weekend with friends. I think the only cuisine we have to rule out is Asian. We are having Italian on Friday night at a Stonewall Kitchen class. I'm almost thinking an early lunch in Exeter because I never get there. Good soups and sandwiches would be fine. My friends are driving me nuts by not making any suggestions but complaining about what I choose. I would like some place that does interesting salads too.
