Wedding Chow (and a note about the recent cheese thread)

My wedding is coming up in early September and I wanted to canvas the hounds for some ideas. It will be an evening ceremony with about 100 guests in a private modern art gallery.

Immediately after the ceremony, there will be cocktails and a selection of passed hors d'oeuvres. Instead of a 3-course, 2 hour sit down dinner afterwards, we like the idea of long tables set with shared platters. Looking for ideas on what to put on the platters - grilled meats? seafood? satays? No dietary restrictions, though I'd like to make sure there's some food for non-meat/carb eaters and the food needs to work at room temperature. I think there should be a salad or some veggies on the table as well (I'm not a big grilled veggie fan). Any suggestions?

Starting to think about saving dessert until later and having a cheese course (maybe with port?) immediately after the dinner. Not that I ever fell out of love with cheese but the recent cheese thread on this board has reawakened my ravenous love. I now carry a list of cheeses in my purse and have so far had the pleasure of trying Epoisses, L'Edel de Cleron and Istara. SWOON. I couldn't find Sottocenere but I did try another truffled Italian cheese called Boschetto Tartuffo. OH MY. Still haven't had any luck with Boerenkaas or Azeitao but I'll keep looking. Thanks to all who made those recommendations.

Okay, back to the wedding. What about when people get peckish again around 11? Personally, I'd prefer something small and savoury over a big sweet table at that hour. Could be something simple like party sandwiches. Any late night wedding nibbles that stand out in your minds?
