So I let myself succumb to the hype and went to WD-50 for dinner. I know that even the best need some time to sort out the details when they open a restaurant, but I had to see this one. The decor is well done if not extravagant. The service is not quite perfect, but the staff has been well trained and it will come together sooner rather than later. The food was everything and nothing like I expected it to be. The cuisine is high concept, like Aquavit or Pierre Gagnaire. Most items have been manipulated and bear little resemblance to their original form. E.g. Oysters pounded flat like carpaccio and served with a pistachio puree. The deep well of creativity and amazing use of innovative technique is on par with what the hype has led me to expect. However, purely on taste alone the food leaves something to be desired. Of the 8 dishes I tasted, none of them made me feel like time had stopped and the only thing that existed was that bite of food. Maybe it will come together with time, but for now go to try the sizzle not the steak.
