Ways to spice up a brown rice & mushroom casserole??

Hello, good people!

So, for Christmas potluck dinner tomorrow night my MIL asked me to make a brown rice and mushroom casserole. I've never made such a thing but figured I'd give it a try. I found a recipe online I'd like to use, and while it seems nice enough, it just doesn't seem to have much OOMPH. Here are the ingredients:

1 cup brown rice
1 Tbsp olive oil
8 oz. mushrooms, roughly chopped
1/2 tsp salt
1 onion, chopped
3 garlic cloves, minced
2 eggs
1 cup cottage cheese
1/2 cup plain yogurt
1/4 cup shredded parmesan (for sprinkling on top)

Does anyone have any suggestions for ways to spice up this recipe? I'm using a combo of white and brown mushrooms, and I'm doubling up on the parmesan. I also thought I'd sprinkle some chopped flat-leaf parsley on top after it's done baking. This has to be gluten-free for a wheat-intolerant family member. Thanks!
