Greetings from Massachusetts! In the early 1970's, I lived in Buffalo and sometimes stayed at The Windsor Arms Hotel when visiting Toronto. A friend introduced me to the Trout Lappland in The Grill room. Does anyone know where I might find the recipe for this dish?
Ah memories. In my opinion, there is no current Toronto restaurant comparable to Three Small Rooms. I loved that place.
If you find yourself in Toronto again, note that the current Windsor Arms Hotel, at the same location, is a replica - a new building with a different management and philosophy. The food isn't especially good.
As to the trout, I can't give you their specific recipe, but it's a very easy dish to prepare. Lightly coat a very fresh trout fillet with seasoned instant blending flour (I think it's called Wondra in the US). Saute it quickly in clarified butter. Deglaze with some white wine, add whipping cream and a handful of fresh dill, and reduce until slightly thickened.
Thanks, embee. I'm not married to the trout and would just as soon try it with readily-available tilapia. For some reason I had in my mind that there were other herbs, like chervil and/or tarragon. Dill makes a lot of sense, with the Scandinavian name.
I have a nice trout in my fridge and thought about Trout Lappland and went to see if I could find a recipe and ran across your comments. I often wondered if it was just me but the Three Small Rooms is, overall, my favorite restaurant anywhere. I had a table they would always give me...I ate there at least once a week. for years. Loved the little elevator from the hotel lobby and that sci-fi hallway to the restaurant door. Compared to the front entrance, it gave my date a feeling of being taken to a secret place. Sorry to hear that the place has changed...I had considered a trip back. At the time, 1970, I really didn't eat fish but a friend challenged me to sample the Trout Lappland offering to pay if I didn't like it and, wow...I loved it. I usually ate in the Grill but once in The Restaurant at which time I discovered I had a kleptomaniac French-Canadian date...she attempted to steal the silver tableware!
We spent the first night of our honeymoon in the Windsor Arms. Thanks for reminding me of Three Small Rooms - it was a nice concept (the three rooms being of differing degrees of formality and level of cuisine) and the food was wonderful. First place I ever saw the vacuum coffeemaker as well - Jamaica Blue Mountain...in the Restaurant. A fine memory.
