wat thai for fathers day?

I've been wanting to go for quite some time, after reading some of your amazing reviews (and fantastic pictorials, thank you Perceptor). I think my dad would love it, and was thinking about going on fathers day.

Will I know (by the line I suspect) which is the correct/best woman to get papaya salad from? (I tried to search the archives, but couldn't find the description I remember reading in the past). I recall it's the woman who prepares it order to order, you have to wait, and she asks you how hot you'd like it.

Do you think that all the regular vendors will be out on Fathers Day. I was thinking on a holiday, it could be packed --or it could be that a lot of the usual vendors don't come out. Any one in the know on this? I was considering "doing fathers day" on another day.

And of course, any other recommendations you'd like to offer up would be great. I have some chowhound notes, and have printed out some of Perceptors pix to take with me, to be sure I don't miss those particular stands. Oooh, reading that back makes me sound a little nuts, oh well, totally worth it I'm guessing.
