wasabi tobiko

Does anyone know how wasabi tobiko is made, or how the other colors (red, black) are made either? Also, I have had very little luck finding sushi restaurants that serve wasabi tobiko: maybe I have just walked into the wrong places.
I prefer it to soy-sauced wasabi.
any knowledge on who serves it well?
