The firemen have challenged us policemen to a BBQ cookoff in 2 weeks. The categories are wide open w/ beef, pork, and chicken/fish. I'm doing a fast brisket recipe that I tried last week from Cuisine at Home, an overnite marinaded pork steak recipe w/ a homemamde sweet chili sauced based BBQ sauce, and I believe I'll do some wings w/ white BBQ sauce. Any thoughts for a good reasonably priced BBQ fish recipe to help me win the trifecta? I was going to do maple/soy glazed salmon but I think I'm going to be running short on cash here. A sauce for the brisket that is out of the ordinary would be cool as well. I would also ask for some sides that will withstand the heat. I will have plenty of cooler space yet safe is better than sorry. Thanks for your help.
