On wait staff in Austin...

Several weeks ago, I had brunch at The Starlite. The waiter took our order holding an armful of dirty plates. Yesterday, I ate lunch at The Claypit and the same thing happened. I thought this dirty plate business was just a one time thing; but now it's happened twice. It seems odd to me, as I've never experienced this anywhere besides Austin. Both times, I told the waiter that we could wait to order until he was ready, and both times, the waiter said he was ready and took our order. I'm not ashamed to say I've worked as a waitress before and would never think of doing such a thing. I’ve found the wait staff here in Austin in general to be very good. Each of the dirty plate holding waiters was friendly and otherwise did a decent job. Okay, the one at The Starlite could have been more attentive. So what's the deal? Is this an Austin thing? Has anyone else experienced anything similar?
