Should Wagyu Beef Tartare be Gristly?

I was at a restaurant last night and ordered their wagyu beef tartare. It had a lot more gristle than I’m used to (I have had tartare a lot of different places, price points, etc) but I don’t eat Wagyu beef often. Is this typical of the preparation? It wasn’t fat that you could chew up but little gristle bits that I ended up having to spit out. I found it rather unpleasant and want sure if that is part of the preparation or I got a poorly executed version of the dish. Thanks in advance for any insights!
