I'll be hosting a Sunday "Waffle and Mimosa" brunch to celebrate the holidays this year for about 16-20. I have a decent professional type waffle iron that pumps out 2 dinner plate size waffles (cut in quarters) every 3 minutes. Of course I will have a variety of waffle toppings, including fresh berries, maple syrup, whipping cream etc.. I'm also serving a spiral ham with a brown sugar glaze. But this is where I get myself stumped.. I just can't imagine what else to offer for sides. I'm considering including a fritatta. But what about a veg or greens?
I don't know why this is so hard! Any suggestions would give me some inspiration!
