visiting Irvine/O.C. Easterish and need food advice

Wife and I want to treat our hosts to some oriental food not more than an hour or so from home base. From reading past threads, I BELIEVE that there is some consensus on BEST

sushi; Shibucho (if prepared by Shibutani Sr.)
soba; Fukuda
ramen; Santoko
Thai; Thai Nakorn
Chinese; China Garden(?)

Now, if I haven't created enough dissention already, consensus seems to break down over best

Korean; Irvine Tofu House or Sagan or Gaju ?
Vietnamese; Quan Hy or Brodards or Tay Ho or Ha Noi or "My something, the place with the brilliant eel curry and venison...". I understand that different VN rests. do different things well, so perhaps in your feedback you could mention outstanding dishes, if I'm not asking for too much. (Thi, please jump in here.)

Then, for desert, take out from Let Them Eat Cake(?).

Knowing little about O.C. food, I welcome and embrace your disagreements with this list.
