Visiting From The Big Apple: Need Suggestions

Will be staying at the Fairmont and friends give me all kinds of tips but I thought I ask the 'indigenous foodies" for some suggestions. Boulevard and Tonno Rosso have been two of the restaurants recommended. Would appreciate YOUR evaluation of these a tips for others......(breakfast, lunch and dinner). While I like to stay away from restaurants whose chefs "toy" with my food and "construct architectural towers" in the middle of an 20" platter, all tips will be appreciated.
BTW, any thoughts about the Wine Spectator at Greystone (Nappa Valley)?
