Vinegary taste on refrigerated canned sweet green & chickpea purèe. help, please.

I've been living on this all year, sometimes eat with pierogi. One can del monte green peas, one can goya chick peas, keep all canned juice, a handful of crunched low-salt potato chips, some white pepper. Chop, whip, purèe. Suddenly the bowls I've refrigerated have become vinegary overnight. Can anyone explain why? Thanks very much.
