I have a family member who is allergic to nightshades and the mint family, and cannot even tolerate spices from these families. We are supposed to bring a salad to a church pot luck this weekend, and I want to bring something that this person can eat, is hearty and filling (because he probably won't find much else that is safe), can sit out for a little while before serving, and isn't too "simple" or bland for others.
He has had to give up most salad dressings except basic vinegar & oil. I am thinking about making what my grandma called a "shipwreck" (an impromptu dish with everything-but-the-kitchen-sink): in this case a pasta salad with lots of diced ham and chicken breast, parmesan and fresh mozzarella, and a ton of vegetables (minus tomatoes & peppers), maybe some black olives, with a dressing like this:
Is there any ingredient that would clash with this dressing? Do I have to wait until the last minute to add the dressing, or can it be mixed early to let the flavors mingle? I am open to any other suggestions, too. Thanks!
