A few months ago I had a chance to drop in for a solo lunch at the successor to Jook Time. The small dining area had been refitted to accommodate a few more seats.
The "beef tendon soup with hand-pulled noodles" turned out to have slices of beef shank marbled with tendon rather than the pure tendon I wanted. Yet, the beef was well-marinated and tender, quite enjoyable in its own right with the firm noodles and aromatic broth.
