Different versions of couscous

We have always eaten a lot of couscous in my family, my mother was taught how to make it (especially the handling of the non-precooked grain) by a Tunisian woman. I have a basic recipe, and also Paula Wolfert's amazing "Couscous and other good foods from Morrocco" and I have found the right couscous grain right here in Rhode Island in a middle-eastern shop. Does anyone out there have their own favourite I could try?
