Versatile & Seasonal foods

Seeing the current post by krissywats on home cooking
relating to carrots, and having read earlier somewhere
on these boards that US potatoes are not as tasty
compared to those of their Brit cousins, would love to
receive your views on foods which are so versatile as
to be used in many different forms (example carrots in
soups, stews, curries, with steak, in pies, cakes,
boiled, cooked, steamed, baked, etc)

Additionally, for example in the case of the humble
potato, the US crop I believe is around Oct-Dec, so
what alternatives are the preferred choice when not in
season ?

Note: this is not a recipe request so please focus on
the topic and let us see everyones views.
