I moved from LA to Napa about six weeks ago. Besides Sticky Toffee Pudding (which I can mail order), I really miss Versailles' Garlic Roast Pork with Rice & Beans. Last week, I found a recipe for Cuban Black Beans which satisfied half of the craving. Before I left LA, I spoke with Manhattan Beach Versailles manager who hinted that the pork was slow roasted in a citrus juice that was imported from Cuba but I couldn't get a complete recipe out of him.
I've searched the web but haven't found a recipe that uses any bottled citrus juices. Are there any Cubans on the board that has a family recipe similar to Versailles? Or is there anyone familiar enough with Versailles' recipe they could recreate it? It is cold and rainy and it is exactly what would hit the spot when the whether is thus.
