Verjus as an ingredient?

bhammonds | Jan 2, 2010 12:25 PM

I recently came across a recipe that looked like a good side dish called Chardonnay-Glazed Carrots. Except for the usual ingredients (butter, honey, cinnamon stick, etc.) it called for Chardonnay Verjus, which when I investigated is apparently an early press of non-ripe Chardonnay grapes that is sharp and tangy. The recipe says you can substitute 3/4 c of white grape juice and 1/4 c of white wine vinegar for the verjus. Does anyone know of a DC-area market that carries this product? I found that I can order it online but it is $20 a bottle plus $15 shipping! (I live in rural south-Central PA but only about 2 hours from DC and am there frequently).
Thanks for any suggestions you might have!
