Venison hindquarter

I've had this in my freezer for a year. With winter slowly coming to an end I figured I'd better defrost it and cook it up. Now that it's defrosted my brain has locked up and I can't figure out what to do with all of it. There's about 15-20 lbs, so I'll probably need to make 3-4 dishes. I thought of doing a bolognese sauce or something similar to a stracotto, or perhaps sauerbraten. Does anyone have any other suggestions? Thanks.
