Venice - what am I missing? (And a night in Florence?)

Hi all, headed to Venice in 2 weeks (!!). Staying in an apartment close to St Marks, we have three nights. After obsessive reading of this board, we've made two reservations, Alla Frasca and Osteria alle Testiere. Very excited about both of those ... planning for our open night we want to do a chicchetti crawl. Are there any must do stops, or can we safely wander around and find decent places? And - realistically, what are the hours? I know Venice isn't a late city and I've seen reference to "early" but are we talking 4 to 6 or 5 to 7 or ??? Is there a preferred area for such a crawl?

Also need some decent gelato while in town, so far I have Alaska, il Doge, lo Squero & Paolin (for lemon) - what am I missing??

Is all coffee there going to be acceptable? Is there somewhere people really like?

Also ... Florence. We have one unplanned night and one unplanned nice late lunch. Already have a booking at Sostanza. What do you reccomend? Not necessarily bistecca since we have that covered, but not really sure where to go otherwise. I've done some research but nothing has spoken to me yet.
