Venice, Florence and Rome - time to get this list pared down. Help!

Looking to visit Italy the last part of May for the first time.We will be doing the three cities listed over the course of eight days (I know...).
I have been reading all the recent posts and have mined Elizabeth Minchilli, Katie Parla and Maureen Fant for their recs
I would like a good sampling of the food scene for each city with one splurge and a look at the market scene and what is good at the restaurants. I don't mind spending for a splurge but rather look for good value for the money.

Venice (we are staying in Castello)
- Antiche Carampe
- Anice Stellato - for Sunday?
- Covino
- L'Orto dei Mori
- Il Refolo
- Trattoria du Fiore

Florence (we are staying a couple blocks north of Teatro Verdi)
- Mercato centrale
- Konnubio
- Bondi

Rome (we are staying just north of Termini)
- Testaccio market
- Armando al Pantheon
- Supplizio
- Emma
- Colline Emiliane
- Trattoria Monti
- Pianostrada
- Retrobottega
- Il Sorpasso

We plan on tours of the Vatican and Borghese Gallery. Some selections were made to accomodate these locations.

And lastly, what about pastries?
- De Bellis
- Roscioli
