veggie soup--to sautee or not?

So, its been raining in NY for like the last week, which means veggie soup/comfort food time. I know this sounds silly, but I've only made chicken soup from scratch before!
I have been looking at a bunch of different recipes, and some call for the onions, carrots, celery, ect to be sauteed and then add the broth and other veggies (like potatoes and green beans), while others just say to dump it all in at the same time and boil away!
which do people like to do better-- sautee the aromatics first or just put it all in a pot and forget about it?
Is not sauteeing about avoiding fat from EVOO or something?
Do you have a favorite basic veggie soup recipe? (one without green or red peppers, please-I hate em)
