Hi Chowhounds,

I love vegetables with just a bit of butter and salt. But my boyfriend...well, not so much. His mom doesn't really eat vegetables, and so most veggie dishes he will eat involve hiding them a little bit. I have a few things he will eat: broccoli with melted cheese on top, grilled asparagus with montreal seasoning, potato soup with a bunch of cauliflower in it, quiche with spinach mixed in. You get the idea. It has to be covered in something or chopped up into little itty bitty pieces and mixed in. Do you guys have any recipes like this? I'm getting bored of the ones I have. I don't mind a bit of work, though some simple recipes for weeknights would be just lovely.

We are relatively adventurous when it comes to spices. His favorite flavors are lemon and chili powder (though usually not together). He typically does not like sweeter vegetables like carrots and peas (weird, right?). The list of acceptable veggies for him includes: broccoli, eggplant, spinach, mushrooms, asparagus, spaghetti squash and cauliflower. Feel free to add other things, though. Sometimes he surprises me, and I do have a few nights a week that I am on my own and can make whatever I want.
