cook a thinly sliced onion and a few cloves sliced garlic, salt and pepper in olive oil low and slow until sweet and brown. dump in bowl to cool. turn up heat, add more oil, sliced mushrooms, more salt, brown, add a little water around end to deglaze pan. add to onions. blanch snow or snap peas, or green beans if they look better, shock, chop up if using snap peas, destring peas if stringy, set aside. slice lots of radishes and cucumbers, fairly thin. wash and dry some arugula. pit and chop some olives. chop some green onions. slice and avocado. roast and peel and slice a red pepper. mix olive oil, balsamic, mustard, salt and pepper to preferred proportions. take baguettes with a little of the crumb scooped out or ciabatta sawed in half or sliced country style loaf, layer a little of each filling, season well (sandwich filling should be a little saltier than if you were eating it plain), drizzle with a little vinaigrette, press top, wrap tight in plastic and allow to sit until hungry.
