Family party, 28 ppl, not enough table space so some will be eating off laps probably...anyway.
I was thinking of a white spinach, mushroom, and artichoke lasagne. I have only made a white veggie lasagna from Cook's Illustrated, it was very good but not make ahead. I want to have this thing made in the am and cooked with the oven off by 3:30 to eat at 5. I am thinking if I cook it in my terra cotta thing it should stay pretty hot in the off oven.
Rest of menu is meatballs in red sauce, marinated grilled chix breasts, grilled zucchini & red peppers agrodolce (room temp), bread, & salad. Of course apps & b-day cake as well. (not exciting I know but for 28ppl ages 2 - 93, midwesterners all, well...)
Any good advice? I am not fully committed to any of this, although the party is Sat so I'll need to decide soon. Thanks!
