I have recently lived with a vegetarian (fish, eggs, cheese ok) who is genuinely concerned with the quality of the food, opting for organic as much as possible.
What puzzles me, however, is the great amount of processed foods and how little fresh fruit and vegetables are part of this person's diet. I had naively thought that vegetarians actually ate a lot of fresh or freshly prepared fruit and vegetables!
What do most vegetarians actually eat; how much of that food comes out of a box and how much of it is home cooked? Is my friend typical?
