I was a vegetarian eater many years ago, and still have a low-ish meat content diet. But my darling and I are moving in together <3 and he does not eat meat and is lactose intolerant. My new year aspiration is to cook vegetarian, but I am struggling with the nuts and bolts of dinner. Darling tends to eat a lump of brown rice and a lump of overcooked beans. I like brown rice, and whole rye berries, and I like beans, and I love vegetables, but having a hard time with the main dish thing. Tofu is lovely in soup, and raw for breakfast, but I keep wanting a main protein thing that is all hot and chewy. Somehow seitan stir-fries don't appeal for every day. I dunno, do I just jettison the main dish idea and focus on a few vegetable dishes at each meal for variety? Do you folks make tofu, seitan or other protein rich items a meal centerpiece? Advice wished for earnestly. I feel a bit lost.
