I've got a vegetarian friend joining my non-veggie family for Easter Sunday Lunch and can't decide what to cook!
Being from the UK, Sunday Roast with all the trimmings is a huge family tradition for us and my hubby and son are big meat eaters.... so if I don't do a roast they'll be disappointed... but equally I don't want to offer my vegetarian guest a boring nut-roast-alternative (which is all I've managed to produce in the past!) alongside the roast beef...
So I would love some suggestions for either:
A) a really fantastic, tasty, nut-roast-type recipe that could be successfully teamed with roast potatoes and several vegetables, or;
B) a yummy veggie main course that I can cook for all of us but that still has a certain 'sense of occasion' about it and will satisfy the carnivores!
Any ideas very gratefully received.
(PS - I've already ruled out vegetarian lasagne as I already have what I think is a delicious recipe for one, me and my daughter love it, but hubby and son aren't that keen, the fussy so-and-sos!)
