I am hosting an engagement dinner for two vegetarians. The dinner will, of course, be all veggie. Even the meat eaters will eat veggie this night to celebrate the guests of honor.
However, I am a certified meat-a-tarian. I have cooked for them before, but I usually wimp out and make pasta. This time I want to do something a little more special. But I can't seem to wrap my head around the idea of vegetables as a main course. I guess it just doesn't seem hearty enough. I've got the first, second (creamy corn soup, salad of bitter greens), and dessert courses covered. It's the entree that has me stumped. Any ideas/suggestions/recipes? I was thinking stuffed peppers maybe? Or is is that too boring?
Any tips from veggie chowhounds and/or hounds who have more experience cooking vegetarian than I do would be greatly appreciated.
PS: They are vegetarian, but not vegan.
