New Vegetarian Ethnic Options

Being a vegetarian, I'm hesitant to jump into L.A.'s front line of ethnic restaurants--I'd love to fearlessly eat what everyone is eating, but it seems hard to guarantee that there's no chicken stock or fish flakes, etc. I can get by on a few standards with Thai, Chinese, Mexican, Italian (duh), Japanese, Indian, and Ethiopian, but what else is out there?

I'd love to hear from people who know how to order veg in Korean, Vietnamese, Samoan, Afghan, or anything I haven't listed above. As to the ones above: are there favorite restaurants you go to for a wider range of veg options? I know Happy Family for fake meat and Paru's vegetarian for Indian, but I'm always looking for more.
