Vegetarian Essential Cookware

For various reason, I am having to start my cookware collection from scratch. I know I'm going to go with Falk, but I'm having a hard time deciding on the correct pieces, because, as a vegetarian, everything seems so big. People talk about a 5.5 qt dutch oven as a daily staple, but 22 cups of beans is more of a giant party!

Have any fellow vegetarians run into this problem? If so, what size pieces do you use the most? I cook mostly masalas and daals, and I mainly roast my veggies. My current pots are way too big (I went wirh the standard knowledge staples, like the abovementioned dutch oven and a 6 qt saute), but it's hard to tell exactly how much smaller I need. I love the shape of Falk's pots de feu, but now I'm worried that the smaller (three quart) may be too big for everyday use for one person. Would a 1.5-2 qt be a better size? I'm all set on pressure cookers, one of which is large enough to double as a pasta pot, so no need to worry about that. (Side note, but I have also discovered in my research that I may be the only vegetarian who doesn't cook stir fry on a regular basis. So I do not need a pot for that.)
