I'm putting together a "dinner and a movie" birthday gift for my super busy sister-in-law, and it not only have to travel several hours by car to get to her, but it needs to stay in the freezer for about a week until her birthday. I've got the soup, main and desserts (plus wine and the DVD!) all taken care of. But I'm struggling with a healthy vegetable side dish that I can freeze and would love some suggestions.
I'm open to something that can be prepped and frozen uncooked, then cooked from frozen. Or something that needs to be cooked, then just heated in the oven.
Dinner is simple -- just a spicy baked penne that I know she and her family really like. I would like something green and healthy-ish to go with it. I would normally send a salad, ready to go, but that won't work since it needs to last for about a week.
