I have a new vegetable sheeter and I'm looking for recipe ideas. So far the only thing I've done is an apple and ate it as a roll up with a little cinnamon and sugar which was fabulous. I want to use it as a bread and noodle replacement. So I'm thinking, sweet potato sheets cut to size as a sub for tortillas in enchiladas and tacos. I've seen a recipe for apple rolled up and baked in a muffin tin, also zucchini sheets for lasagna, I'm thinking daikon sheets for filled roll ups. Wow I wonder if I could lacto ferment the daikon sheets? I bet I could. Stacked sheets baked, both fruit and vegetable ones. Also using the sheets as a substitute pastry crust in muffin tins and filled. I'm going to dry dehydrating the sheets also as a snack. Obvious vegetable and fruit chips.
