It's Silver Palate's pork ragout with apricots and currants. I'm making mashed potatoes since I have so many potatoes on the counter. I'm cooking for 12 and would love a vegetable side that is more complex than just pan-frying or steaming some beans, since I rarely have the leisurely afternoon to cook (happy birthday to me!) and I may as well make use of it. I'm in Seattle, so the produce selection is pretty good.
