So Thanksgiving diner for us will actually be happening on Friday Night. I have to work on Friday but will have Thursday to prep. I was thinking it would be great if I could prep the Vege Wellington (I haven't chosen the recipe yet) for the oven the day before and have my wife stick it in the oven while I'm at work to be ready for dinner. However I was thinking the day in the fridge would not be good for the puff pastry and any moisture from the inside would leach into the dough and ruin it. For many reasons, my wife doesn't want to be responsible for more than sticking it in the oven. The other thing to note is I'm really bad at improvising while cooking. With those things in mind, does anyone have a suggestion?
