I am planning a holiday dinner for friends and beef tenderloin is the main. I need a vegan main to go along side it. In my research for ideas online I discovered vegan wellingtons that I think fit in on the table perfectly. But there are so many different recipes and they DO really vary. I'd love some vetted recipe suggestions from the trusty chowhound gang.

I prefer the vegan wellington to have some protein (lentil/beans) but it's not a deal breaker, I can be flexible. I am planning a "faux gras" appetizer with a lentil and nut base and I could find a way to sneak some beans or lentils into another side dish if I had to. I want the wellington to taste good more than anything and be something the non vegan guests might have a slice of as well. Any tried and true recipes? A make ahead version would be ideal.
