vegan cheese suggestions

Vegan Cheese Vegan

This week I've been having great success with cashew cheese. Some truffle oil really made it fantastic with crackers, atop a cold summer lentil salad, and in a zucchini casserole. I'd love to try other vegan cheeses--any tried and true suggestions? TIA!

    I've bought and tried most brands of vegan cheese (dr cow is the best! And $$$), most others range from bad to terrible.
    For homemade cashew based cheese/soft cheese is the best and easiest.... And so versatile!

    I made this baked almond "feta" a while back now, i remember it was easy enough especially with almond meal, i just don't like fussing with cheesecloth or waiting enough to make it much

        You're right! They are so new I hadn't tried it yet when i posted that comment last july. I love the yogurts and tried a few of their cheeses one day at a tasting table. I'm torn because their products are so good and i love the idea of this company becoming very successful and accessible to more people- but their prices are high enough it's an occasional indulgence vs weekly shopping list.....

      Love the cashew cheeses. I've enjoyed eating some of the fermented versions too but I haven't tried to make my own...yet. You might try making a pine nut ricotta, I've had a lot of success using it in desserts and other sweet things, especially as a crêpe filling!

            I just did my first batch of Rejuvelac to try some of the cultured ones. I'd been putting it off because it seemed like a bit of a hassle, but it turns out that it's really not. I made the cultured cream cheese from the Gentle Chef's Non-Dairy Evolution ebook, and the basic cashew cheese from Artisan Vegan Cheese. They both turned out really nice, and you can choose how much lactic acid tang you want by letting it sit for varying times. We've been having it on bread with our meals all week. I can see these being an always-on-hand item for us. As soon as I buy more cashews, I'll branch out into some flavored varieties.
