I know there are many variations when breading using the Standard Breading Procedure.
Usually items to be deep fried are dredged in flour, then egg wash and finally bread crumbs. Frequently seasoning is added to the flour or bread crumbs in the form of dried herbs or spices. I don’t recall ever seeing seasonings added to the egg wash until the other night, when I was half asleep on the couch, a chef on TV was making an egg wash and he added something I thought was unusual but, like a dream, I couldn’t remember what it was the next morning when I woke up. It may have been a liquid. Do you ever add seasonings to your egg wash? What do you add to your dredging flour or bread crumbs to kick up the flavor? Thanks!
