I'm looking for the ultimate vanilla bean ice cream recipe. I've found several candidates, but I'm surprised by the amount of variation.
Some use cream + whole milk, others use cream + half&half. The cream to half&half ratios vary from 1:1 to 3:1. One uses 1 vanilla bean in 6 cups of liquid. Another uses 3 beans in 3 cups liquid. This last recipe also uses a half cup of brown sugar.
I do like decadent soft & creamy ice cream. I like vanilla intensity, and I prefer not overly sweet.
(I did make the 2nd one before, and it was delicious. But is it the MOST delicious? Hmmm...)
Any thoughts on what the various milk/half&half/cream ratios do? Will the brown sugar be a nice touch? Is 3 beans going to be too vanilla-y? Thanks!
