Vancouver treasures

We're coming to Vancouver in September and are trying to narrow down the places we'd like to try. We have lived in the SF bay area for two decades and so have sampled a variety of great foods. We like local places and try to stay in the moderate price range splurging at times when it is really worth it.(Splurge for us means $150 for two with wine). We've been reading and asking you hounds for advice. So far..we think we will try dim sum at Kirin in Richmond and perhaps En for sushi/japanese,Vij's for East Indian.
Here's the question..is Vij's the one(we like Northern Indian) or should we try their new restaurant? We had also thought about an Italian place and Il giardino looks good as does Cafe di Medici..thoughts, suggestions? Piccolo Mondo also looked good. We've been to Italy and loved Tuscan fare the best. Blue Water Cafefor Pacific NW food) looks good from the "books"..is it so? We'll be staying in the West End..friends have also recommended Delilah's..any thoughts on this? Do we need reservations before leaving for B.C,? Any other places we should consider?
