things to do in vancouver in a day

i've reposted this from the "not about food" board - would love any thoughts!

my mother and one of her friends have a day long layover in vancouver, none of us have been there. she has travelled a lot, loves food, but has not been too well recently, and therefore is less energetic. i am trying to put together a comprehensive itinerary for them and would love some insights given the limited time they have. based upon the reports on food, i am recommending lunch for them at sun sui wah and maybe dinner at tojos. in terms of sights, what would you recommend? i am thinking a morning stroll around stanley park, followed by a wander around chinatown. is there anything else they should definitely do? do you have any recommendations for informative, not overly touristy walking tours?
