Given the limited info I found on Valencia, thought I will add my NOT TO BE MISSED experiences here
1. Trencadish (Calle Padre Tosca 3, 46003 Valencia).
Outstanding food and excellent value for money. Took the 35 Euro Disfrutar menu along with a series of brilliant "wines by the glass" from the list. BTW: need to share that I found the wine list as well as selections by the glass to be extremely good. The menu includes appetizer, starters, fish, meat and
dessert. The stand out courses included the figs with foie (the cube of foie embedded in the fig btw), the fish (grouper) with seaweed and mussels and the beef cheeks with canneloni.
2. Restaurante Levante Valencia (Calle Maestro Rodrigo | Esquina Con Manuel de Falla, 46015 Valencia)
Went to the new location in the city. The starter Mussels were very very tasty. Ordered the paella negra (with pulpo) and found it to be very good. Personally don't care about the soccarat etc but ended up scraping every single morsel stuck to the pan anyways. The Maitre'd responded to our questions by inviting us to peek through the specially constructed glass window to see how the dishes are being cooked - very nice! Immediately made another reservation to try out the traditional Valencia version with rabbit and chicken. Again a winner...
3. Tasca Angel (Calle Purisima 1, 46001 Valencia)
Standing old school tapas bar. The house specialty was the sardine - muy bien. The eel (All i Pebre) with an almond based gravy was another knockout dish that must not be missed. The owner mentioned that they get the seafood from the Mercado Central everyday and was also talking about the rapid pace of change in Valencia driven by tourism. Felt 'Last of the Mohican"ish hearing his lament..
Obviously ate at a bunch of other places ..good but nothing remarkable
