I just came back from 2 weeks in Colorado and since I didn't find too much written here before I left, I thought I would just share. Had 3 very good dinners at:
Northside Kitchen
Hooked
and Mountain Standard.
All recommended by our jeep tour guide and all were excellent!
Does anyone else have summer-specific recommendations - including current info for groceries, wine, farmers markets (I know there's one in Vail -- any nearby?)? We'll be there in July. We'll take a day trip to Aspen.
As for outdoor markets, Vail's is on Sunday mornings, its large and probably about 25% food, Minturn's is Saturday morning, large and some food. Avon and Edwards markets are also Saturday mornings, small and mostly food.
My go to places are now Boxcar in Avon or Mountain Standard in Vail. Both have al fresco, casual dining. Boxcar opens at 2pm and has just started a brunch on weekends. For lunch, really good sandwiches and salads at Eat/Drink in Edwards. Sweet Basil is still the tops for fine dining.

And 3 fun places: fish tacos and wings on roof at Mango's in Red Cliff, margraritas at Minturn Saloon Bar (go after 5 pm, empty before) and Walcott Yacht Club all day for bar food in the "yard" along with live music on weekends (can get very crowded).
Since Sunday we have had three fine meals at three different price points. Splendido last night for fine dining. Golden Eagle Inn on Sunday for al fresco lunch. The Rose tonight for a very different experience for the Eagle Valley.
We had not been to The Rose, which is located in Edwards near Juniper and Main Street Grill, although it has been open a couple of years. We will definitely be back. The menu is eclectic with a range of food origins and flavors.
Pickled Watermelon & Pork Belly Salad contained arugula, mint, lemon basil, ponzu, basil oil, scallions and dukkah.
Seared Ahi Tostadas was beautifully presented with wonton crisp, avocado mousse, mango citrus slaw, scallions, soy sauce and sriracha aioli.
Chile Nogada was a roasted red pepper stuffed with braised beef, pork tenderloin swiss cheese, candied walnuts, apple and pomegranate with tomatillo & walnut anise sauce.
Highly recommended.
