I recently hosted breakfast for about 30 people, and I needed some ideas for interesting breakfast foods - not your usual two fried eggs, bacon, potatoes, toast and coffee! I tested most of these for the two of us in the Geek Valley Test Kitchen of Doom before inflicting them on people. Recipes gladly provided on request.
Banana-stuffed baguette French toast with maple-pecan butter
Mini calzones stuffed with omelet fixings (eggs, tomatoes, mushrooms, peppers, onions, leftover Honeybaked ham, etc.) as well as the usual mozzarella-ricotta business - some with ham, some without to please the vegetarians, and the ones with no meat were marked with a V in extra dough
Those rolls you buy in plastic trays from Albertsons (the ones that aren't fully baked to begin with) stuffed with gouda, turkey sausage, and apple
Do-it-yourself beignets (from a Cafe du Monde mix, worked GREAT in a wok with instructions so people coudl have hot beignets)
Potato quiche with goat cheese, leeks, and roasted red peppers (halfway between a tortilla española and a leek tart)
Gaufres (Montreal-style waffles, with sugar that caramelises on the OUTSIDE of the waffle during cooking)
Walnuts candied with cinnamon and sugar and then crushed for inclusion in coffee
